Pandan Cheese Layered Cake


Life should be simple. But how to?? Twist and turn, ups and downs, fall and get-up and other things that catches you off-guard. What to do? Such is life because there's bound to be experiences to make you and me better. Right. Some things beyond our control but when it comes to a dessert, we decide right? Well, at least for you every now and then. Not always I feel up and about for Classic Genoise(Sponge Cake) or Baked Grapefruit Cheesecake

Here we have this pandan cheese layered cake. You can start from the stretch and bake the Pandan Cake (bake one cake instead of individual cupcakes) or.................. buy the cake like I did. Then layer with the cheese frosting and crushed peanuts. And you have  - Pandan Cheese Layered Cake. 

For the cake - recipe here

For the cheese frosting
250g cream cheese
3 eggs - separate the whites from the yolks
1/2 cup sugar
1/2 cup crushed peanuts
Method
Cream egg yolks and sugar till soft.
Add cheese and continue to cream.
Whisk/beat eggs whites till stiff. 
Gently incorporate in the cheese mixture.

For assembling:
Cut/slice the cake (depending how many slices you like. Three should do good) 
Spread the cheese mixture on top of one slice and sprinkle peanuts over. 
Gently pressed together.  
Do the same to the next slice and top with the three layer and more peanuts on top.

  9. oh what a colorful cheese cake ...i admit patience is needed while baking from keeping the ingredients at room temp to cool them ,its a lengthy process...

  26. I just love this cake. By looks alone I can tell this would have tasted great. I wish I had pandan leaves in my garden too...we get it in Asian stores only.
    And I wish I could have eaten this cake too. Gorgeous!
