Kerabu Kacang Botol (Asian Style Winged Beans Salad)


By far, the simplest way to a healthy crunchy salad with winged beans/ four angled beans, aka kacang botol. Easily grown I've been told though I have not kick started, maybe sooner or later, still, you can buy a big bundle for just a dollar. The beans can be eaten raw or stir fried (four angled beans and tempeh stir fried), here is kerabu kacang botol with a medley of chopped/sliced Asian ingredients for the refreshing crunchy deliciousness.  

Ingredients
10 winged beans -remove strings on both sides and thinly slice
1 lemongrass - thinly slice/shred
2-3 sprigs coriander leaves - thinly slice/shred
4 shallots - chop/slice thinly
2 red/birds eye chilies - chop/slice thinly
Lime juice - as needed
1 small piece (or as per taste) palm sugar - smoothly crushed
2 tbsp fresh grated coconut - dry fry till crispy and light brown in color
Salt to taste  


Method
Add all ingredients into a mixing bowl.
Toss and stir.
If possible, serve immediately to retain its freshness.

  20. The first time I had these vegetables was during my food-tasting event in Malacca. Somehow, it's not commonly seen here in SG. I enjoy the texture & flavours tho.
