Curry Leaves Potato Chips


Don't we all love, I believe so, we do love the amazing scent of curry leaves? I don't know about you, I sincererly do. Curry leaves for my dishes (Vegetarian Mutton Curry Leaves, Curry Leaves Fried Mee Hoon, Eggplant Curry LeafCurry Leaf Cashew Nut Rice, Crispy Fried Bitter Gourd Curry Leaves & Curry Leaves Chilli Lala), more of curry leaves in other dishes as well. (Masala Raisin ChickenMoor Kolumbu & Cauliflower Curry). How about then curry leaves for potato chips? I did it.  I did. Turned out as a fantastic fab, see, a tiny kitchen invention can be a major food joy and value to ordinary potato chips? Absolutely. Albeit not akin a major breakthrough, nor something out of this world, but does, mind you, tickle our taste-buds. Potatoes and curry leaves, indeed should be known as marriage in heaven food thought (Potato Gratin, Jacket Potatoes, Potato Green Peas Curry, Chilli Chicken Potato, Potato Bok Choy Soup, Rosemary Potato Egg, Spicy Tuna Potato & Tapioca Poriyal). Chippy-crispy potato chips by far I bet is forever a favourite, for snacking or paired alongside rice, curry (sambar and tanni saar) and side dishes, perfection for vegetarian meals nevertheless too (ney sambar, pepper garlic rasam, vegetable raita, vegetable green curry, fried mushroom rolls and masala tofu with French beans).


Ingredients (as needed) 
3 potatoes - remove skin, sliced thinly and soaked in ice water for 10-15 minutes.
1 tsp plain chili powder
3-4 sprigs curry leaves 
Salt for taste
Oil for frying 

Note: 
Careful while frying the curry leaves. They splatter and oil splatters as well.  
Before frying, soak sliced potatoes in ice water to release starch and to crisp up. 
Method
Wipe/pat dry potatoes.
Add chilli powder and salt. 
Mix well. 
Heat oil and fry in batches till crunchy and crispy.
Remove and keep aside.
In the same oil, fry curry leaves till crispy as well. 
(Note: you can also fry the leaves first before frying the potatoes) 
Scoop out, cool down slightly, gently crush and toss with the chips.

  2. Where did you get the lovely idea from, Nava? I do make potato chips at times, but have never thought of adding curry leaves & spices. Brilliant!

    Btw, it's also very common in SG to see servers in tradition Japanese costumes, but not diners. It was my first time, so I got a bit excited. Hahaha!

  24. That is the amazing thing about herbs...they add so much flavour to food. Curry leaves are not found easily on our side but certain dishes are incomplete without that flavour so in that case a visit to the Indian markets are a must. Next time I get some, I will surely try this recipe. Looks fantastic with specs of green.
