How can it possibly be not to eat instant noodle with living life in the fast lane? The rush to and from work and workplace stress I admit calls for a packet or a cup of instant noodle - whether at home or at our desk. Pouring hot water thereafter slurping the noodle is about all at work whereas at home we can elevate and customise the taste like how I made "Instant Asam Laksa". This version with Mamee tom yam instant noodle, sardine, a big handful of shredded cabbage, chillies, palm sugar and fish sauce is certainly worth bragging about for its authentic Thai flavours.
1 can sardine/tune (drain the sauce)
3 shallots - chopped
2-3 red chillies - crushed/finely sliced
1 piece dried tamarind or tamarind/lime juice (as needed)
Cabbage or other veggies - shredded or sliced (as needed)
1/2 tbsp fish sauce
1 tsp palm sugar (can be replaced with brown or white sugar)
2 tbsp of oil
Spring onion for garnishing
Salt for taste (only if needed)
In heated oil, sauté shallots and chillies.
Pour 1/2 litre of water.
Let it simmer.
Add the rest of the ingredients (including seasoning for noodle) except for spring onion.
Continue to simmer till noodle is cooked.
Dish out and garnish with spring onion.
