Spicy Tuna With Potatoes


For career women like us, I think we have to adequately stock up our fridge and pantry. It is definitely the quest for our cooking, whether during the weekend, can we speak about cooking on weekdays after returning from work? Hack and hell isn't it? Time constraint, what to cook and cooking as fast as we can (Mushroom Yee Mee Soup, Rosemary Potato Egg Salad & Stir Fried Chinese Cabbage Prawns). Trust me, I know what I am talking about. Weekends are no better. Weekly washing and cleaning, meal again, oh, lets not forget about marketing and groceries (Masala Tofu Beans, Egg Sodhi, Mango Pickle & Malaysian Egg Benedict). Therefore, as I have said, stock up ingredients. Stock up onion, garlic, lentils/grains, potatoes, eggs and what not, do include canned food (Cheesy Bread Roll, Dhal Vegetable Soup, Dried Prawn Paste & Chilli Mutton Potato).


 I too tend to stock up fish, canned sardines, and lately, I have included canned tuna as well (Grilled Tuna Burger, Fried Tuna Cutlets, Sardine Masak Lemak, Ikan Masak Kicap & Fish Cutlet). And so, I think I have brought you closer to this Spicy Tuna With Potatoes. Quick and fast, pair this side dish with rice, bread or fill in burger buns.

Ingredients
1 can tuna (about 200g) - drain off oil/water.
1 large potato (about 250g) - remove skin and slice into thin squares.
Spices - 1 cinnamon, 2 cloves and 1 star anise
1 tbsp fish curry powder
1 large red onion - sliced thinly
1/4 tsp garam masala/all spice powder
3-4 sprigs mint leaves (can replace with curry leaves)
Oil as needed
Salt for taste
Method
Mix potatoes with salt. 
Fry till crispy, remove and keep aside.  
Remove and keep aside.
Leave about 2 tbsp of oil in the same pan.
Sauté onion and spices.
Add curry powder and garam masala and quickly stir.
Put in tuna and season with salt.
Continue to stir/scramble for about 3-4 mins.
Lastly add fried potatoes and mint leaves. 
Stir again and dish out.

  21. Canned Tuna is also in my pantry at all times..it is definitely handy for a quick meal. I am so excited to find something new to make with it now. This dish looks amazing and I know we are going to love this. Bookmarking it!
