Spicy Tuna With Potatoes


Adequately stocking up the pantry I've figured out is the answer for a convenient or emergency meal. Stock up onion, garlic, lentils/grains, potatoes, eggs and do include canned food. Time I know is why we sometimes forgo cooking at home. But can't be eating out all the time right?? Expensive never mine but what to eat or to pack can lead to endless arguments. I admit its the same story in my house too. And I know to keep everyone quiet, canned sardine (spicy sardine sambal and sardine varuval -  the pics horrendous but excellent recipe I vouch) is the answer. They love.


Another favourite is also canned tuna (fried tuna cutlets)- inexpensive and nutritious and with potatoes, potatoes, spices and mint leaves  - tadaa with rice or bread.

Ingredients
1 can tuna (about 200g) - drain off oil/water.
1 large potato (about 250g) - remove skin and slice into thin squares.
Spices - 1 cinnamon, 2 cloves and 1 star anise
1 tbsp fish curry powder
1 large red onion - sliced thinly
1/4 tsp garam masala/all spice powder
3-4 sprigs mint leaves (can replace with curry leaves)
Oil as needed
Salt for taste
Method
Mix potatoes with salt. 
Fry till crispy, remove and keep aside.  
Remove and keep aside.
Leave about 2 tbsp of oil in the same pan.
Sauté onion and spices.
Add curry powder and garam masala and quickly stir.
Put in tuna and season with salt.
Continue to stir/scramble for about 3-4 mins.
Lastly add fried potatoes and mint leaves. 
Stir again and dish out.

  21. Canned Tuna is also in my pantry at all times..it is definitely handy for a quick meal. I am so excited to find something new to make with it now. This dish looks amazing and I know we are going to love this. Bookmarking it!
