Not a usual fare but I sure made these cutlets. Well, instead of repeating the same recipes with caulis (aloo gobi, cauli butter stir fried, cauli coriander curry, cauli fritters and cauli pakoras), another type of cutlet I thought off. These fried cutlets of course are crispy on the outer and soft bite inside.
1/4 (about 400g) caulis - cut into florets and steam/boil till tender
3/4 cup bread crumbs
4 shallots - chopped
1 red chili - chopped
1 green chili - chopped
1 tsp cumin seeds
1-2 sprigs coriander leaves - chopped/shredded
Salt for taste
Oil for frying
Mash boiled caulis and mix with the rest of the ingredients.
Take small portions of the mixture and shape into cutlets or rolls.
Deep fry and drain over kitchen towel.
