Cauliflower Cutlets

Not a usual fare, no. Out of nowhere, this invention to cauliflower cutlets popped up on my mind. Don't ask me how and why, I suppose sometimes cooking does become boring when we have to cook for the sake of it, or as I have said before, the same dishes repeated over and over does become boring as well. So, I had a go-go strong to cauliflower and instead of those dishes I have shared previously (Aloo Gobi, Cauliflower Coriande Curry & Cauliflower Pakoras), I invented these crispy on the outer and soft bite inside cauliflower cutlets. A vegetarian version indeed, these cutlets took on the role of a side dish for our regular all the time rice meal, but can stop you from having them as a savoury snack for tea time (Potato Rolls, Fried Mushroom Rolls, Crispy Fried Japanese Tofu & Crispy Fried Kai Lan). Give a go, don't be afraid to try new dishes, cutlet I bet will not fail you.

Ingredients
1/4 (about 400g) caulis - cut into florets and steam/boil till tender
3/4 cup bread crumbs
4 shallots - chopped
1 red chili - chopped
1 green chili - chopped
1 tsp cumin seeds
1-2 sprigs coriander leaves - chopped/shredded
Salt for taste
Oil for frying

Method
Mash boiled caulis and mix with the rest of the ingredients.
Take small portions of the mixture and shape into cutlets or rolls.
Deep fry and drain over kitchen towel.

  24. This is such a great recipe! Most of us get cauliflower at home, use a portion and the rest is stored for later use. This would be a wonderful way to finish that and with the rest of the ingredients anything will taste great. How creative! I know what I am going to do with my cauli this weekend.
