Carrot Almond Cake


I guarantee you that nothing can go wrong with baking a carrot cake. A very simple and basic thing to do -  ingredients on stand by and then mixing and baking. Still  please don't rush when folding the flour in. That is important  to avoid tiny white lumps in the cake. As with the carrots, you have two options. Either squeeze out the juice after grating for a soft spongy cake or add just like that for a dense and moist type which of course will take longer to bake.

Ingredients
3 carrots (about 400g) – remove skin, grate and rub with some flour all over
2 cups self raising flour
2 eggs - beaten
1 cup canola/no smell oil
100g crushed almonds (without skin)
1 tsp vanilla essence
1 cup sugar
Method
Mix and stir sugar, eggs, oil and vanilla.
Gently mix in flour first followed by carrot and almonds.
Stir well for a non-lumpy mixture.
Add in a greased baking pan. 
Bake at 180c for about 1hr 20 mins or until cake is done.

  25. One of my favourite cakes! Your's looks marvellous with the grated carrots as the perfect garnish. I use the carrot juice to make a syrup for my cake with a dash of orange juice. Enjoying all the baking action from your side:-)
