Rosemary Potato And Egg Salad


Growing herbs is one thing, pruning is the other. Pruning essentially is akin a must to spiral new sprouts (Pepper Basil Crab & Basil Tomato Soup). Otherwise, herbs will remain stagnant, basically they won't grow lusciously no matter how much of tender loving care we give them (Pandan Mango Sticky Rice, Curry Leaves Chilli Lala/Clam & Avocado Mint Dip). And, while you are at pruning, another lets say twenty minutes will be good for pulling out weed. Otherwise, it will be akin we are growing weed, which by the way will outgrow our herbs. Each time I prune, I make sure those herbs are put to good use. Into a dish please (Chilli Coriander Steamed Fish, Spring Onion Burdock Soup, Watermelon Mint Salad & Butter Basil Prawn).

Take this rosemary (Rosemary Cheesy Potato, Rosemary Butter Garlic Toast & Rosemary Chicken Stew) and egg salad for an example. Eggs by the way is always there in my fridge (Egg Cheesy Bun & Egg Sodhi/Coconut Stew), same story with potatoes (Potato Green Peas Curry, Chilli Mutton Potato & Chilli Chicken Potato), perhaps I am guessing that you do stock up cheese (Cheesy Bread Roll) and of course our lovingly grown rosemary (Rosemary Lemon Baked Chicken and Lemon Parsley Baked Salmon). Growing rosemary in Malaysia I can understand is rather tricky, so. feel free to replace with other, even local herbs will do.      

Ingredients
2 medium size potatoes - simmer to soften and cubed
2 soft boiled eggs - lightly crumbled
2 pieces of chicken ham/bacon - sliced thinly
10 garlic - chopped
2 sprigs rosemary
1 tbsp oil
Pepper and salt for taste
Method
In the heated oil, fry garlic and ham/bacon till light brown in color.
Add potatoes and continue to fry for 2-3 mins.
Put in rosemary and season with salt and pepper.
Give a good stir, off the heat and combine in crumbled eggs.

  34. Definitely going to try this without the chicken/ham though... I might just add some paneer or tofu maybe...Yes, gardening is fun though i don't grow herbs here yet, but at my mom's home, there's a huge balcony garden growing lemongrass, mint, aloevera , tulsi etc :)
