Condensed Milk Coconut Bars (Eggless)


These coconut bars are the other version to the traditional candy. Vibrantly coloured with artificial green or red colouring, traditional candy is made by stirring the coconut mixture over low heat. These bars whereas are baked for the pure light brown layer and soft texture. Definitely easier to made. 4 ingredients mixed together, tipped into a baking pan and baked. Done and over just like that. The size of the bars depends on the size of the pan. Small pan will give thick pieces while bigger pans will give flat pieces. Baking time also depends on the size of the pan, how crispy you like the outer layer to be, oven type and temperature. I used a flat square pan and baked at 165C for one hour and increased the temperature to 180C for the last ten minutes.  

Ingredients
3/4 cup condensed milk
2 cups coconut - either fresh grated or dessicated. Fresh is suggested. 
4 tbsp melted butter
3 tbsp dried black currants.
Method:
Add all the ingredients in a bowl.
Mix for a smooth consistency. 
Tip mixture into a greased baking pan. 
Bake at 165C for 1 hour.
Increase the temperature to 18C for the last ten minutes. 
Remove from oven and cut into bars.
Once cool down, run a knife over the bars or break into pieces.
