Simple Mutton Curry With Cumin Coriander Rice And Yellow Cabbage

If not all, most mutton (Mutton Mee Hoon Soup) curries are made with spices (Spicy Mutton Soup), curry powder and chillies as in for a thick curry with succulent mutton (Dalcha/Mutton Dhal CurryMutton Kurma, Indian Mutton CurryMutton  Bone Marrow Curry  & Mutton Devil Curry)  To make a different type of mutton curry, it is about varying the spices. For a quick fix curry, I use ready made spice powder (Prawn Curry LaksaPotato Green Peas Curry),  Sometimes I do dry fry the raw spices and blend for an authentic curry (Indian Masala Chicken Curry). Again, it really depends. Of course cooking curry on weekdays is about rushing back from work and quickly making, whereas during weekends, spices are dry/pan fried and blended. By far, this is the most basic mutton curry, made with the ever available at home ingredients. But when paired with cumin coriander rice (Cumin Rice, Curry Leaf Cashew Nut Rice & Ghee Almond Rice) and yellow cabbage (Stir Fried Carrot Coconut, Spicy Chickpea Long Beans, Stir Fried Tapioca, Valakkai/Plantain Podimas, Vegetable Achar & Long Bean Turmeric), indeed a lavish Sunday afternoon meal.

For the mutton curry
400g mutton - cut into bite sizes
1 tbsp ginger paste
1/2 tbsp garlic paste
1 1/2 tsp turmeric powder
1 large red onion - sliced
2 tomatoes - sliced
3 potatoes - remove skin and cut into chunks
2 tbsp plain chili powder (or as per taste)- mix with some water for a thick paste
Spices - 1 stick cinnamon, 3 cloves and 2 star anise
3-4 sprigs curry leaves
2 sprigs coriander leaves - sliced
5 tbsp oil
Salt for taste

For the cumin coriander rice
2 cups white rice
1 tbsp salted butter
1 large onion - sliced
3 sprigs coriander leaves - shredded

For the rice

When seeds starts to splatter, add rice.

Add this rice with 3 cups of water into rice cooker.
Season with salt.
Once cooked, fluff up and stir in coriander leaves.
For the cabbage
