Mushroom Soup And Butter Garlic Toast


Soups are the best comfort food during or after a heavy downpour. Any kind of soup for the matter is a sheer pleasure for cold or winter weather, I by the way just love all types of slurpy piping hot soups (Mutton Mee Hoon Soup, Thai Spicy Carrot SoupChinese Herbal Chicken Soup, Chinese Burdock Wolfberry Soup & Tom Yum Goong), including the thick or light vegetarian (Hot Masala Lentil Soup, Spinach Tomato Soup Dhal Vegetable Soup) or non-vegetarian (Mutton Ball Soup) Indians soups we generally pour over rice prior to tucking in (Yogurt Rasam/Indian Pepper Soup). And for a change a Western style soup actually appeared on our table from my kitchen. Believe me! Not always, never, regardless, this thick home style vegetarian (Gado Gado Vegetarian & Mushroom Mutton Stir Fried) mushroom (Fried Mushroom Rolls) soup (Mushroom Tofu Soup) was hailed as filling dinner meal, specially when paired alongside rosemary scented (Rosemary Cheesy Potatoes) butter garlic toast (Malaysian Egg Benedict, Egg Cheesy Bun & Panini Malaysian Style).

Ingredients
For soup
1 tin/can of straw mushrooms (feel free to use any types)
3 garlic - sliced
3 shallots - sliced
2 tbsp of olive oil
Pepper and salt for taste

For toast
1 standard size baguette - sliced into medium size pieces
2 tbsp butter
6 garlic - chopped
2 sprigs fresh rosemary - remove leaves from stems and bruise
Method
For soup
Sauté garlic and shallots in olive oil.
Put in mushrooms, stir for 2-3 minutes.
Pour 2-3 cups of water (depending on how thick you like the soup to be)
Cook till mushrooms are softened.
Remove from heat.
Cool it down before puréeing/pulsing/blending
Pour back soup in pot and simmer.
Season with pepper and salt. 

For toast
Mix butter, garlic and rosemary.
Spread on one side of baguette slices.
Bake at 175C for 10 mins till toast is crispy and golden brown in color.

  7. Haa, Looks straight from oven, fresh, yellow and warm. Love it.
    Baguette is definitely a real french discovery, tastes good with any ensemble of veggies and cheese.
    Also rosemary is herb of herbs for me, especially in french cooking.

  15. This is what I call comfort soup. Comfort meal. Mushroom sup and toast makes a good meal almost every time.

    I do love mixing a few types of mushrooms. But since I can cooking for 2, it only means I have to freeze some in the fridge or use some of the mushroom to make pasta sauces:D

  18. The chinese call those who love rice-'rice pots', good thing not fussy about food, else we would not be getting this recipe-nice comfort food on a rainy day- for non'rice pots'-this is heavenly food and very fulfilling.
