Watermelon into a savory salad???? Yes, I
did it. I had an impromptu craving to chill my throat with watermelon. I tried to
search for the smallest size melon, digging inside the big basket in the mini
market. I finally gave up because there was no outcome; I mean how small can a
watermelon be? We eat and were satisfied with a few pieces of the chilled
watermelon. It was back to square one now - what to do with the balance?
We could have continued eating the fruit for the next few days or I can
fall back to my previous recipe of
My mind lingered over something different and in flash of the moment, I decided to
prepare a savory salad, appealing and stimulated with mint, shallots, chilies
etc etc for the deep collisions of tastes and discernible crunchiness. The only minor setback is that the salad must be eaten once prepared. If not, it will become soggy as the juices from the melon will
contribute to that. Making the salad is stress-free because all you got to do
is chop/slice and toss the ingredients together. Savory dishes are great as a
side dish yet you can nimble on as a healthy snack.
Ingredients
300g water melon -
cut into mini cubes
1/4 cucumber -
remove seeds and cut into small cubes
4-5 sprigs of mint
leaves - lightly shredded
3-4 shallots -
sliced thinly
1 green chili -
sliced thinly
1-2 red/birds eye
chilies - sliced thinly
1 1/2 tsp lime
juice
1 tsp sugar
Salt for taste
Method
Toss all the ingredients together before serving.
(Note: You can omit sugar if the melon has ample sweetness)




Mint is a sure fire winner and used in such an ingenious way, matching together all the ingredients, truly a healthy and tasty combo, and with the option to add/not add sugar (for those who wish to 'sin' a bit/or not.
