Batter Fried Dory Fish With Ginger Lemongrass Sauce

Never knew dory fish existed until about a year ago, no doubt fish is something I cook more often than anything else, but dory, never ever. Anyway, didn't matter because when I was at the hypermarket, I bought a packet of the affordable fish and over the next one month, I tried a few recipes. Nothing really turned out great, in fact disastrous as the fillet is soft and breaks up easily. Definitely not a choice at all for curries, eventually the disasters were indeed a learning curve for I became a winner - I won the battle on how to cook dory - dipped in egg white, coated in flour, again dipped in egg white and fried to utmost crispiness and paired with a lemongrass ginger sauce.

For the fish
300g dory fish fillet - cut into squares and pat dry. Season fillet with salt and pepper.
2 egg whites - separate each into 2 bowls and lightly beaten.
1 cup rice flour - season with a pinch of salt.
Oil for frying

For the lemongrass ginger sauce
2 red chilies (or as you prefer)
1/2 inch ginger
2 shallots
1 lemongrass
** chop these ingredients.
1 tbsp brown sugar
1 1/2 tbsp lime juice
Salt for taste

For the fish
Heat oil and while it is heating, dip fish into the first bowl of egg white.
Remove and gently roll over flour.
Dip again into the other bowl of egg white.
Deep fry in batches and keep aside.

For the sauce
Combine all ingredients and give a good stir.
Serve with batter fried fish on a serving plate lined with salad leaves.

  7. Nava, I always use frozen dory for both Western & Chinese cooking & they turn out really well. Your dish looks fab especially with those sauce!
