Batter Fried Dory Fish With Ginger Lemongrass Sauce


I never knew dory fish (Dory Fish Spicy Butter Sauce, Dory Fish Sambal & Dory Fish Sandwich) existed until just a year ago though fish is something I cook more often than anything else (Thai Salmon Noodle Soup). Dory fish is generally air-packed, it comes with a few pieces in the packet and also, is found at the frozen section. Additionally, dory is not really suited for curries (Fish Green Curry) or heavy-duty dishes because it breaks up easily. So, after experimenting with it for a couple of dishes, I've figured out that soft dory fillet will do justice for a fried (Ayam Goreng Berempah) platter dish (Lemongrass Chicken Kebab, Malaysian Egg Benedict, Gado Gado Vegetarian & Lamb Burger), akin this Batter Fried Dory Fish With Ginger Lemongrass (Lemongrass Prawn Mee) Sauce. Batter coating or flour coating definitely will do the job to keep the fish intact (Spicy Chicken Chop With Mashed Potatoes). For this dory fish recipe, I guess I won the battle again instead of feeling disappointed because it turned out as expected. Dory dipped in egg white, coated in flour, again dipped in egg white and fried to utmost crispiness (Potato Rolls Mint Sauce), and paired with a lemongrass ginger sauce (Fried Stingray Lemongrass Spicy Sauce).

Ingredients
For the fish
300g dory fish fillet - cut into squares and pat dry. Season fillet with salt and pepper.
2 egg whites - separate each into 2 bowls and lightly beaten.
1 cup rice flour - season with a pinch of salt.
Oil for frying

For the lemongrass ginger sauce
2 red chilies (or as you prefer)
1/2 inch ginger
2 shallots
1 lemongrass
** chop these ingredients.
1 tbsp brown sugar
1 1/2 tbsp lime juice
Salt for taste


Method
For the fish
Heat oil and while it is heating, dip fish into the first bowl of egg white.
Remove and gently roll over flour.
Dip again into the other bowl of egg white.
Deep fry in batches and keep aside.

For the sauce
Combine all ingredients and give a good stir.
Serve with batter fried fish on a serving plate lined with salad leaves.

  2. While Iw as reading the part on the lemongrass sauce, my tummy went rumbling and mouth started watering. I must try making this sauce soon. It should go well with the grill meats that we're intending to have next weekend.

  7. Nava, I always use frozen dory for both Western & Chinese cooking & they turn out really well. Your dish looks fab especially with those sauce!
