Blackcurrant Meringue Pie

At times impulsively I buy ingredients. I was at the hypermarket and somehow I bought the bottle of blackcurrant jam thinking that it will be lovely with bread toast to start my day. Actually for the first few days, I did have bread with the jam. Then back to the old habit of skipping breakfast (Malaysian egg benedict and cheesy bread rolls) and the jam  left in the fridge. 

It came to a point that if I didn't use up the jam Blackcurrant Cake, I have to throw it away. So I baked this pie - three layered with biscuit crumbs at the bottom, next the jam layer and topped with meringue.  

For the bottom layer
200g grams milk Marie biscuits or digestive biscuits - crushed 
50g melted butter

The jam and middle layer
3 tbsp blackcurrant jam
1 cup milk
2 egg yolks
1 1/2 tbsp butter
1 tsp gelatin - mixed into 3 tbsp of water to dissolve
(Note; you can use any type of jam)

The top and meringue layer
3 egg white at room temperature 
1/2 tbsp white sugar
Crumble biscuits with butter.
Press into a greased spring form pan.
Leave it in the fridge.
Simmer jam and milk over low heat.
Remove from heat and let it cool down for about 3-4 mins.
Quickly whisk in egg yolks and gelatin.
Bring out the biscuit layer from the fridge and pour jam mixture on top.
Bake on preheated oven at 170C for 1/2 hour or until firm. 
Remove from oven and keep aside.
Whisk egg white till fluffy and shining peak while adding sugar bit by bit.
Tip meringue over the jam layer and continue baking (about 15 minutes or so)
When the meringue becomes brownish in between, remove from oven.
Cool down and decorate as you like.
