From the many ingredients I use for my savory dishes, chilies are one of those I can't give up. Even if I don't add chilies into the dishes, we will have slices of raw chilies as an accompaniment to the food we eat. This is the usual thing we do but for desserts, never ever before. I did gather from cooking programs that chilies can be incorporated into desserts and I was in to try out for myself. Almost all ingredients where there in my pantry except the bar of dark chocolate and cocoa.
Working my way through, the pudding did rise after baking. However, by the time I sprinkled sugar and pieces of chilies on top, the pudding collapsed. The heat also kept me away from snapping the pictures immediately. Whatever it was, we loved the subtle spicy hint of the chili flakes mixed with the dark chocolate.

Ingredients
80g dark chocolate - cut into smaller pieces
40g unsalted butter
40g fine granulated sugar
40g fine granulated sugar
2 medium eggs
1 level tbsp plain flour
1/2 tsp chili flakes
butter and cocoa - to prepare ramekins/containers with
sugar to dust (optional)
Method
Brush the base and sides of 4 ramekins/molds with butter and dust lightly with cocoa.
Tap out excess.
Place chocolate and butter in heatproof bowl.
Microwave on medium-low for 2 mins to gently melt chocolate.
Be careful not to overheat and cool to lukewarm.
Whisk eggs with sugar until thick and light colored.
Fold in lukewarm chocolate, next the flour followed by chili flakes.
Transfer to the prepared containers.

Bake in a preheated oven (190c) for 15 mins or until pudding rise slightly.
Remove and dust with sugar before serving.



Such an interesting combination, i'm tempted to give it a try =)

ReplyDeleteUsing a hint of chilli is not unusual in chocolate, though it enhances the flavor more. But your chopped chillies on top sounds interesting and I just want to try it.

ReplyDeleteI saw people combine chilli and chocolate on TV before.. I always thought the combination would taste really weird. However, since you mention that they go along pretty well - now, I have no doubt that this marriage indeed works.
ReplyDeleteI think the sweet and heat are an amazing combo. A while back I bought a jar of cocoa chili powder but haven't used it yet.
ReplyDeleteThe pudding has a nice, firm texture with soft innards when you bite into it, followed by a sweet, crunchy sugary and spicy taste, the chilli is not too hot, fear not, instead, it gives a nice conterbalance to any sweetness, lending body and a mature taste, turning any simple one tone sweet dessert into an exotic morsel, ready to be savoured to the last bite, thanks , Nava, for letting me try your dessert
