Carrot Crumble/Pie


I have the habit of buying carrots every week. The orange hue of carrots is simply irresistible to ignore.  For the rest of the days, I will be staring at the carrots wondering what I should do with them. The usual is adding into stews and soups, maybe in between trying out a salad too.  The idea of making a dessert from carrots was working wonders in my mind. Carrot cake or cupcakes are so normal, so I decided to make a crumble which was superbly simple.  Except for the process of grating/shredding the carrots, the rest was about assembling the ingredients.  The cooking took me about 5 mins, stirring the carrot mixture over low heat.

The crumble can be served in two different ways, warm after removing from heat or pressed into a tray/pan as a thin pie. The ingredients are open, I mean look at what you have at home to save cost.  The carrots of course are a must and the rest like:

Ghee can be replaced with butter
Brown sugar to white sugar
Almond flakes or almond powder

A scoop of vanilla ice-cream over the crumble of pie will be marvelous.  I didn't have any stock of ice-cream so I served the crumble/pie with pieces of shredded carrots and raisins.




Ingredients
500g carrots - grated/shredded into fine stripes
70g ready made almond flakes
50g raisins
1/2 tsp nutmeg powder
2 tbsp brown sugar
Method:
Heat ghee and when heated, all of the ingredients inside.
Stir over low heat for about 5 mins.
Remove from heat.
Serve warm as it is or 
press into a spring form pan.
Chill for one hour or so.
Cut into any shape you like before serving.

  1. Grating carrots is often the most tedious task at hand. The cooking is rather fast and easy. I've made something similar but had used cinnamon instead of nutmeg. Never been much of a nutmeg fan.

  3. This is really a unique pie to me. Not sure why I have never seen or heard of a carrot pie because it does sound like it would be a delicious creation. Also, it does look like a great one to go to when you crave the flavor but do not want all the fat and calories that go along with a carrot cake. Glad you posted this one Nava-yum!

  5. Oh WOW. This is such an inspiring dish. The childlike simplicity of it just fills me up to the brim with wonderjoy. So simple yet so healthy and might I add that your plating skills are simply STUPENDOUSLY SUPERB. This will be great as a snack and for those with a wweet tooth a huge dollop of ice cream will not be misplaced atop this oh so orangy treat. You have truly outdone yourself Nave. Too good.

  6. Just eat them raw or juice it, if you do not know what to do.
    But Nava, I must say I have never seen or heard a carrot pie. I think this is much more healthier than those with flour crust. This recipe is good for me to start.

  7. Yesterday we just had carrot and banana cake. This picture reminds me of that.

    It's been long time since I did some blog walking and I like the new look of your site. It is neat and loads faster and easy to read. I ditched FB and moved to Google + I never liked FB and had to spend hours to delete all the so call friends in FB. I could have easily delete the account but I have an advertising account in FB and I sometimes use that for my clients.
