Lemon Grass Cake


Within the small plot of land in front of my house, I grow as many local herbs. The easiest to grow of course is pandan leaves and lemongrass. The rest - mmm!! curry leaves and kaffir lime leaves are struggling but they are still alive. Pandan leaves are my favorite for savory dishes and desserts as well. The leaves simply fabulous for the Pandan Poached Pears.  Another fav is lemongrass, also known as "serai. Used mostly for savory dishes but this time and my first attempt for a cake. Tasted similar the lemon tea loaf except slightly sharper and with orange glaze for a nice finishing.


Ingredients 
For the cake
1/3 cup butter
1 cup caster sugar
2 eggs
2 cups self raising flour
3/4 cup milk
3 sticks lemon grass

For the orange glaze
1 orange - extract juice 
10g butter
1 tsp orange rind
1 tbsp sugar
Method
For the cake
Process/blend lemon grass with milk. Drain to remove lemon grass residues.
Cream butter and sugar till light and fluffy.
Add eggs one by one; while alternating between flour and milk mixture. 
Beat on low speed to combine in.
Tip/add mixture into a greased baking pan. 
Bake at 175c for one hour or until the cake is done.

For the orange glaze
Simmer all ingredients for a thick syrup.
Once cake is out of oven, immediately pour glaze over. 
Cool down and cut into pieces/slices.

  11. I have never baked with lemon grass, but I have been toying with the idea. You beat me to it! Glad to know that it does work and lends a sharper flavor than the standard lemon cake. Since I have been thinking about it, you have saved me some experimentation. I am saving this unusual but tasty recipe-well done Nava!
