Kiwi Fruit Loaf (Served with Kiwi Fruit Sauce)


I don't bake that often but I enjoy coming up with my own recipes for desserts as and when I have the extra time in hand. Whenever I make desserts, its with minimal sugar added inside. Somehow we cannot digest desserts with high sugar content because we have always been conscious with our sugar intake. Moreover my other half has issues with his health and though his diabetic is under control,  I suppose being careful with  the amount of sugar getting into our system makes sense and I am fine with it. In fact, most of the time my other half goes sugarless and he holds himself back from eating the desserts I make even with the least of amount of sugar inside.

So I was feeling hyped up when I received the parcel from NuNaturals with nine products which are the healthy substitute for sugar. You can use any one of these products for  the food you make, into desserts, beverages and savoury dishes too. All of these products are made from natural ingredients and without artificial sweeteners. For a start I used one or two of the products for baking the kiwi fruit loaf. There are many other recipes I have created with the products which will be shared with all of you in due course.

I am not sure whether anyone else has baked a cake with kiwi fruit neither did I bother to google to look for a recipe on it. Quite a challenge it was because I had the fear of "What if my cake does not turn out right?" The cake did crack a little on top after baking but turned out delicious in taste. I received positive feedback from the cake testing I did because the natural sweetness was very obvious in the taste. My other half too had a big slice of the cake and for once, he did not feel guilty about sugar and health. I also made a kiwi fruit sauce with one of the Stevia product for the additional kiwi flavor.

Ingredients
For the cake:
3  (about 330g) kiwi fruit - remove skin and chopped into small pieces
2 cup all purpose flour
1 cup MoreFiber Stevia Baking Blend
3/4 cup oil
1/2 tsp Vanilla Stevia alcohol free

For The Kiwi Fruit Sauce:
3 kiwi fruit (remove skin and mashed)
1/2 tsp NuStevia NoCarbs Blend
1  cup water
1 tsp corn flour (mixed with a little bit of water)

Method
For the cake:
Whisk baking blend and oil to get a smooth paste.
Break in eggs one by one and continue to whisk.
Add vanilla stevia and whisk over low speed with adding flour little by little.
Once the flour has been incorporated, add into a parchment laid baking pan
Bake on preheated oven at 170c for about 1 1/2 hours or until cake is done.
For the Kiwi Fruit Sauce:
Boil water and when boiling, add kiwi fruit.
Cook for about 5 mins and add NuStevia  blend.
Stir in and pour in corn flour.
When sauce thicken remove from heat.

To Serve
Add sliced cake into a serving plate and drizzle the sauce over.

  2. Very interesting that Stevia has come out with flavoring now. Just the fact that these are natural is a plus! Having diabetes should not mean that you have to miss out on great flavor, so I am glad Stevia is expanding their line of products.
    Your fruit loaf looks tasty. I have never seen a baked good with kiwi, but it does sound delicious!

  8. I have only tried kiwi as a cake topping, never tried actually baking with it.
    Glad that your experiment came out successful. The outcome looks totally delicious and tempting especially with that sauce. Yum yum!

  20. Kiwi cake! Love kiwis but I've not tried it in the form of cakes before. I must give this recipe a try when I lay my hands on some good kiwi fruits.
