Panini Malaysian Style

After I came back from my trip to Italy, I somehow started having a liking for panini. While having the short breaks during our sightseeing, I ventured into Panini as a in-between treat for brunch as well as during the waiting time for dinner meal. Back home I explored on making panini with the normal slices of bread without any meat filling inside. I find that with meat added into the bread, its on a heavy side and too much for us to swallow because we are all small eaters. Just going for veges as the filling and lots of it are much healthier.  Since I normally like a light dinner, this panini fell in place for the same reason. Not that we eat only healthy food all the time but we do try to balance our diet, rotating between the sinful and non sinful food.

I used the portable over the stove grill for these so called panini or Malaysian style sandwiches they may seem to be. As you can see from the pictures, the cheese and the rest of the ingredients complemented each other for the sensational taste and flavors.

Ingredients
4 slices of bread
4 slices of cheddar cheese
8 slices of tomato
1 onion - sliced into rings
4-5 pieces of lettuce leaves - tear into smaller pieces
chilly sauce - as needed
tomato sauce - as needed
Method:
Into one slice of bread, place a cheese slice on top.
Then add with two slices of tomato and lettuce leaves.
Drizzle in chilly and tomato sauce.
Place another slice of cheese on top of these ingredients.
Drizzle some more of chilly and tomato sauce.
Close with a slice of bread on top.
Do the same to the other two slices of bread.
Put both packs of bread on a heated portable grill.
On top of the bread packs, place a baking tray large enough to cover them.
Place two heavy cans on top of the baking tray, I did with two big cans of condensed milk.
Once one side is grilled, remove the tray and turn to grill the other.
Place back the tray and cans on top.
It will take another 5 mins or so if grilled over low heat for the dark brown coloring of the bread slices.
Remove and cut across before being served

  1. This looks like a tasty excuse to pull out the panini press. This definitely proves that sandwiches do not require meat in or to be tasty. Tomatoes, onions and cheese-yum! You are right about meat in sandwiches. A lot of times having a meaty sandwich for lunch means I am not really hungry for dinner!
