Tofu Scrambled Eggs

In my previous recipes of Egg and Potato Curry and Bean Sprout Omelette, much has been said about eggs. So without repeating the same pointers again, let me just continue with this recipe - recipe - eggs cooked with tofu,capsicum and spring onion, for a side dish or filled into bread slices.  

2 eggs 
1 red capsicum - remove seeds and cubed into small pieces
1 white firm tofu - cubed into small pieces
1 (about 80g) onion - chopped
2 sprigs spring onion - sliced thinly
2 tbsp of oil
Salt and pepper for taste

Lightly fry tofu on both sided in heated oil.
Remove and keep aside. 
Into the same oil, saute onion. 
Add eggs and season with salt and pepper. 
Scramble over high heat and add fried tofu, capsicum and spring onion.
Stir in and dish out.

  6. Well said! colors do bring meaning to your life. And in cooking also I think of colors.
    I combine my tofu with other things as I do not like the taste of it on its own. Tofu scrambled eggs is the perfect dish for me.
