Lemongrass Salt Fish Pickle

I made another version of salted fish pickle. A slight twist to the previous Salted Fish Pickleand Pada Salt Fish Pickle. But more or less for the essential salty-spicy-tangy flavours. This one is with lemongrass, my favourite local herb and with chilli padi/birds eye chillies. Instead of commercial white vinegar, I used apple cider vinegar for a touch of natural taste.

300g threadfin/kurau fish - soaked for 10 mins, rinsed and cut into medium size cubes.
10 birds eye chillies (optional)
3 tbsp apple cider vinegar
1 tbsp palm sugar
1/4 cup water
Oil and salt as needed

To blend/grind
2 lemongrass
10 dried red chillies (or as per taste)
2 tbsp coriander seeds
1 tsp cumin seeds
1 tsp fennel seeds
8 shallots
1 inch ginger

Deep fry salt fish, remove and keep aside.
Leave about 3 tbsp of oil in the same wok/pan.
Fry the spice paste till aromatic and oil floats. 
Add vinegar,sugar, salt and water to dilute the paste.
Add fried salted fish and chillies. 
Stir again to coat the salt fish with the paste.
Remove and once cool down, store in small air tight container and keep in the fridge.

  12. Yums. I love salt fish also. Deep fried until crispy and combine with onion and cili padi and just squeeze a lil bit of lemon. Way to go !

  13. I have been told that salt fish is something that if I tried I would be hooked. Unfortunately, fish prepared in that way is hard to find.
