Turmeric Mushroom Soup

This vegetarian soup is made with oyster mushroom, tomato, spices and turmeric powder. It's a light soup as a light start for a meal or just to fill up the tummy when you want to slow down and take it easy with food. 

1 small packet (about 200g) white oyster mushrooms - washed and tear into pieces
2 small ( about 150g) tomatoes - sliced thinly
1 (about 120g) onion - sliced thinly
1 tsp cumin seeds
1/2 tbsp turmeric/kunyit powder
1 tbsp lemon juice
1/2 liter water
2 sprigs coriander leaves - sliced thinly
2 sprigs spring onion - sliced thinly
2 tbsp oil
Salt for taste

When oil is heated, saute onion. 
Add cumin seeds, turmeric powder and sliced tomatoes.
Stir and cook for a mushy mixture. 
Pour in water and let it simmer.
Once heated through, add mushrooms and season with taste.
Simmer to soften mushrooms and off the heat.
Combine in lemon juice, coriander leaves and spring onion.

  2. that looks absolutely fab! i've tried the western mushroom soup but nvr heard of the indian version! i really love indian cuisine.. they're so rich in spices and flavours, and am one that loves heavily spiced food. in fact, i prefer indian food over say, chinese. haha!

  4. Turmeric is an amazing spice. I didn't know that it helps remove odors and am glad to hear that tidbit of information. The only thing I can think of that's wrong with it is that it stains everything it touches. :)

    Even so, I'd give this soup a try immediately because it looks so delicious!

  6. Turmeric is something that I always make sure I have-I have been on a curry binge lately. There are always traces of orange left behind on my fingers as well as towels when I use it! The turmeric and the lemon in this recipe are a great blend to flavor up soup, so this is well worth trying. Thanks for sharing.

  10. Wow this is certainly a different type of mushroom soup, I am so used to the thick and creamy ones. But if its mushrooms this must be good, I love them.
