Potatoes And Spinach Stir Fried (Aloo Palak)

Over at my place spinach is like one of the cheapest veggie. I pay around a dollar or two for a big bunch. Spinach is also packed with plenty of nutrients and can be converted to various delicious dishes. Here's the potatoes and spinach cooked with cumin seeds, also known as aloo palak.  Its a loveable vegetarian dish for rice.

3 (about 400g) potatoes - boiled, cut into medium size cubes and deep fry with the skin on
I bunch spinach - remove roots, cut into pieces and simmer with water till soft and mushy.
1 tbsp cumin seeds
6 shallots - sliced
1 tbsp lemon juice
3 tbsp oil
Salt for taste

Heat oil and saute shallots.
Add cumin seeds and let it splatter.
Put in the rest of the ingredients.
Stir well and dish out.
