Lemon Bars


I've messed it up again with pictures right? I know. But I'm not going to apologise to any of you . I did my best, I guess the best slipped off from my camera. That's okay. There will other chances for me to get back on track with pictures, right now let's cut it short and roll in the lemons (Lemon Cashew Nut Rice, Lemon Cake & Lemon Tea Loaf). Lemon and lemonade, do I have to say anything? Nice thirst quencher for sure, we on the other hand are going to make lemon bars. Lemon bars!! These bars were baked for a pot luck gathering, I accepted the deal to a dessert though. Buttery crusty bars with sweet lemony topping. Slightly burned atop because I fumbled with the oven heat. Friends did notice the tiny black spots, yet they were not shy in pleasuring into these awesome bars.

Ingredients
For the crust 
1 cup all purpose flour
1/2 cup softened salted butter
1/4 cup icing sugar

For the lemon topping 
1 cup icing sugar
2 eggs - lightly beaten
1/2 tsp baking powder
3 tbsp lemon juice (or as preferred)

Method
For the Bottom Layer
Crumble the ingredients for the crust.
Nicely press into a greased baking tray. 
Baked at 175C for about 15 mins or until it becomes firm and crusty. 
Remove from oven. 
Mix all the ingredients for the topping and pour over the baked layer. 
Place back in the oven and bake for another 20 mins until it is firm and light brown in color. 
Remove, let it cool down and cut into squares.
Don't forget to trend alongside "cook with nava-k" on every other social media please!!

  2. Hard to pass on buttery shortbread with a tart lemon topping! Easy to understand why they were liked by your co-workers, lucky recipients. Delicious and addictive-no doubt.

  5. I am with you Nava, When you are making something like this hands are the best tool to mix. Lemon bars look nicely done and I am sure it would have been a hit at your work place.
