Chick Kut Teh

It's another version of Chinese herbal soup compared to my previous, also known as Chick Kut Teh. Simply said; I tried a different brand of the ready made herbs which is the star ingredient. Rather than following the recipe as stated on the packet, I "did it my way".  The herbal chicken soup was rounded up with rice, sliced zucchini and sliced chillies, soy sauce and lemon juice.

For soup
1 packet Bak Kut Teh Herbs

300g chicken - cut into bite sizes
1 whole garlic - cut the top a little bit to expose the cloves
1 tbsp dark soy sauce
1 tbsp oyster sauce
1 tsp sesame oil
Pepper and salt to taste
Coriander leaves for garnishing
For  chilli dip
10 birds eye/red chillies - sliced
1 tbsp light soy sauce
1 tbsp lemon/lime juice
1 tsp sugar
*** combine and stir all together

Simmer 3/4 liter of water and once heated through, put in sachet, chicken and garlic.
Continue to simmer over low heat till chicken is tender.
Add in oyster and soy sauce, sesame oil, pepper and salt to taste.
Stir, off heat and garnish with coriander leaves before serving.
Serve with white rice, zucchini and dipping sauce.
