Lemon Cashew Nut Rice


No, no. I'm not going to start with the same lemon theory.  That theory already overused millions of times, and has become a boring rhythm. Of course, we can't deny on the scent of lemon which is just so refreshing. Citrusy awesomeness. Nose blowing. Now, what else should I say? I think enough on lemon, perhaps rice should be next. Then again, I've already said aplenty in the previous recipes (Nasi Dagang, Mango Basmati Rice Pudding, Rice Vadai, Ghee Rice, Cumin Rice & Rice Congee Salted Eggs) too. So, better we just stick with making this lemon cashew nut rice. Rice cooker please. I don't believe in over the stove or pressure cooked. Effortless and uncomplicated with rice cooker even for this lemony and curry leaves scented rice, elevated with cashew nuts fried in ghee. Pure mouthwatering deliciousness.

Ingredients
2 cups Basmati rice
2 tbsp desiccated or fresh coconut
100g cashew nuts
2 tbsp lemon juice (or as preferred)
2 sprigs curry leaves
1 tsp mustard seeds
1 tsp turmeric powder
2 tbsp ghee/butter
Water and salt as needed

Method:
Add washed rice, lemon juice, desiccated coconut, turmeric powder, water (about 3 cups) and salt into rice cooker.
Give a good stir and let it cook.
Fluff up rice after cooking.
Now, heat ghee and fry cashew nuts till crunchy.
Add curry leaves and mustard seeds.
Quickly stir, tip into rice and gently mix.
Let it sit for about 10 mins before serving.
