Coca-Cola Baked Chicken

My previous recipe of Coca-Cola Cake was quite a hit. In fact I received feedback from those who baked it and they loved the deliciousness. While I was also encouraged to bake another cake with other soft drinks, I was more keen in a savoury chicken dish with coke.

First few attempts; failed massively because the taste was not right, maybe the combination of ingredients or the cooking technic. Finally, I did it!!! The chilly flakes, ahhh! married so well with the sweetness of coke. Coke chicken was paired with white rice and cucumber slices. I'm sure that it will be another awesomeness; stuffed/filled in between toasted bread and with cucumber and/or salad leaves. If you do try, drop me a note on the taste please. 

2 pieces (about 250g) chicken breast 
2 cups coca-cola
Chilli flakes  - per taste
1 (about 100g) onion - chopped
1/2 tbsp blended/grounded ginger
1/2 tbsp blended/grounded garlic
Salt to taste
2 tbsp olive oil
sliced cucumber (optional)
Simmer coke to reduce it to almost 1/4 the liquid.
Once cool down, add into a mixing bowl with chicken, chilly flakes. onion, ginger, garlic and salt.
Mix and marinate for about 1-2 hours
Place chicken with all the marinated ingredients in a baking tray and drizzle oil all over.
Baked at 175c for 25 mins or until chicken is half cooked and light brown in color.
Drain/remove the drippings, continue baking till chicken is done and dark brown in color (another 20 mins or so).
Remove from oven.
