Chicken Feet Salad (Kerabu)


Cleaning chicken feet is as tedious as cleaning prawns (Shrimp Paste (Belacan) Sambal Prawns). In fact really time consuming to de-bone. But did I have a choice? Nope. I have already bought the chicken feet at the hypermarket, not knowing that cleaned ones are sold at morning markets. Anyway, patiently I de-boned since I love the soft gelatinous chicken feet tossed with carrot, chillies, shallots, fish sauce, lime juice and crunchy roasted cashew nuts for a salad/kerabu.


Ingredients
10 pieces chicken feet - boiled to soften, rinsed and de-boned.
1/2 (about 90g) carrot - sliced into thin stripes
1 red chilli- sliced
2 birds eye chillies - sliced (optional)
5 shallots - sliced thinly
1/4 inch ginger - sliced into thin stripes
40g/one handful roasted and crushed cashew nuts
2 stalks coriander leaves - sliced
1/2 lemon/lime - extract juice
1 tbsp fish sauce
1 small piece palm sugar - powdered
Salt for taste (use sparingly)

Method:
Add all ingredients into a bowl, toss together and that's it.

  3. OMG,,,,remind me my mother at home,she like to cook soup chicken feet, I bet that salad tatse good,I admit it I like the way my mom to cook chicken feet,but i don't have that for long-long time,,,
