10 pieces chicken feet - boiled to soften, rinsed and de-boned.
1/2 (about 90g) carrot - sliced into thin stripes
1 red chilli- sliced
2 birds eye chillies - sliced (optional)
5 shallots - sliced thinly
1/4 inch ginger - sliced into thin stripes
40g/one handful roasted and crushed cashew nuts
2 stalks coriander leaves - sliced
1/2 lemon/lime - extract juice
1 tbsp fish sauce
1 small piece palm sugar - powdered
Salt for taste (use sparingly)
Add all ingredients into a bowl, toss together and that's it.
