Chicken Feet Salad (Kerabu)

Aha! Not sure how of you followers of "cook with nava-k" will be in favour of Chicken Feet Salad/Kerabu. Chicken Feet remember? The chicken feet chicken walk all over. I really don't know about you, but I love the feet (Lemongrass Chilli Chicken, Rice Vadai & Pineapple Salted Fish Curry). Of course, I must love my feet as well? Otherwise, tell me what can I possible do without them? Okay, lets just stick to chicken feet before I take you through a twilight dark tunnel. As usual, I generally tend to divert to other topics, and when I do, there's no stopping. So, let us now look at how to make chicken feet kerabu. Okay, Like this. Cleaning chicken feet is hell. We are talking about time, are we not? Sure. So, you can these days buy the pre-cleaned chicken feet at hypermarkets or I'm assuming at wet markets too (Spicy Crab Parathal, Chilli Honey Clams & Chilli Chicken Raisins).

But, I thought I was a hero. I bought chicken feet and I struggled to pull out the skin. Hack! Nevertheless, to cut short on the story, here's to this soft gelatinous chicken feet tossed with carrot, chillies, shallots, fish sauce, lime juice and crunchy roasted cashew nuts.

Ingredients
10 pieces chicken feet - simmer to soften, immediately rinsed and de-boned.
1/2 (about 90g) carrot - sliced into thin stripes
1 red chilli- sliced
2 birds eye chillies - sliced (optional)
5 shallots - sliced thinly
1/4 inch ginger - sliced into thin stripes
40g/one handful roasted and crushed cashew nuts
2 stalks coriander leaves - sliced
1/2 lemon/lime - extract juice
1 tbsp fish sauce
1 small piece palm sugar - powdered
Salt for taste (use sparingly)

Method:
Add all ingredients into a bowl, toss together and that's it.
