Anchovies (Ikan Bilis) & Long Beans Fried Rice


Fried rice is a quick fix filling meal. Can be made practically with anything. Of course the essentials for any Asian style fried rice are cooked leftover rice, eggs, garlic and reasonably priced local vegetables. Try the kampung fried rice, belacan fried rice, Chinese fried rice or this latest addition - leftover rice with ikan bilis/anchovies, long beans, eggs and spring onion. Served with cili padi/birds chillies in soy sauce and cucumber slices.


Ingredients
2 cups cooked white rice
2 tbsp anchovies - soaked for 10 mins, drained and cut into smaller pieces. 
10 long beans - sliced into thin rings
2 eggs 
5 garlic - chopped
2 stalks spring onions - sliced thinly
4 tbsp oil
Salt and pepper for taste

Method:
Heat oil, break eggs in, scramble till half cooked and remove.
In the same oil, fry anchovies till crispy and crunchy.
Remove and keep aside. 
Add garlic, saute and put in rice, season with salt and pepper. 
Stir all together over high heat.
Combine in long beans, scrambled eggs and spring onion.
Give a good stir and remove from heat.
Pair with cucumber slices and red/birds eye chillies (optional)

  13. Hi! Congrats on top 9! The dish sounds as wonderful and it looks. I love anchovies. Good idea adding them to fried rice. They must give the dish a nice flavor.
