Mango And Basmati Rice Pudding


I always believe in keeping it simple with cooking. Basically, with more pressure mounting up in life, especially the daily traffic jam, companies sucking up every drop of our blood in the name of competitive advantage, some people in return sucking up to bosses by bad-mouthing us, managing our home affairs and what not, tell me please on time management. Easier preached than practiced I suppose some things, what I am saying is that we can still cook, but we don't have to spend hours for a simple meal. Take this dessert for an example. Sure, its easily put together, moreover, with cooked white rice (Pandan/Screwpine Rice Pudding, Rice Vadai & Dates & Sunflower Seeds Cake). What lacks in presenting this mango and basmati rice pudding, it makes up in simplicity, time and taste. Make it and taste it.


Ingredients
2 cups cooked Basmati rice
1 cup thick coconut milk
Pinch of salt
Palm sugar/gula Melaka (simmer with water for a thick syrup)
Cubed fresh mangoes (as needed)

Method:
Combine rice, milk and sugar together.  Microwave for about 2-3 minutes.
Remove and press into a mould, either one big or smaller moulds.
Let it cool down and set in the fridge.
Plate up rice pudding with syrup and cubed mangoes.
Don't forget to trend alongside "cook with nava-k" on every other social media please!!

  5. sometimes cooking is about not wasting and thinking of re-using the extras we have. Seems like mangoes are such a favorite among so many.

  13. This was one of the unusual things I found with Malaysian cusine before was mixing rice with fruit. The first time I tried it was with durian and I am glad I tried it as it was awesome now I am looking at that mango above I guess this will be more superb.
