I seldom make desserts but when I make, I like the no hassle with minimal ingredients types. I bought mangoes for the ever famous Thai mango stick rice but forgot to buy the glutinous rice. So I used cooked basmati rice which is in fact better for its gluten free and aromatic too. Rice was combined with coconut milk and a pinch of salt and microwaved for 2 minutes. Then paired with fresh mangoes and palm sugar syrup.
2 cups cooked Basmati rice
1 cup thick coconut milk
Pinch of salt
Palm sugar/gula Melaka (simmer with water for a thick syrup)
Cubed fresh mangoes (as needed)
Combine rice, milk and sugar together. Microwave for about 2-3 minutes.
Remove and press into a mould, either one big or smaller moulds.
Let it cool down and set in the fridge.
