Mee Rojak (Vegetarian)

I've  shared the recipes for homemade curry mee, curry mee vegetarian and laksam noodle. And here's another noodle dish - mee rojak or mixed noodles. Gravy made with potato, peanuts and vegetable stock, assembled with yellow noodles, boiled egg, taugeh, tofu pok and mint leaves.  Of course its my own version since I've tasted the dish from road side and hawkers stalls. For a non-veg version, add chicken/prawn stock and top with chicken meat, fish balls, fish cake or anything else you like.

For the gravy/sauce
1 tbsp dried chilli paste
5 shallots - sliced thinly
Spices - 2 sticks of cinnamon and 1 star anise
30g (1/4 handful) roasted semi-crushed peanuts
1 (about 80g) potato - boiled, remove skin and mashed
1 piece assam keping (dried tamarind)
1 liter vegetable stock (yes, you need it for the flavors, otherwise with plain water, the gravy will be bland) 
4 tbsp oil
Salt to taste

Other Ingredients (estimates)
Yellow mee/noodles - blanched to soften
Boiled eggs - sliced into two
Fried flat brown tofu pieces - sliced
Bean Sprouts/taugeh - blanched
Mint leaves - for garnishing

When oil is heated, sauté shallots.
Add chilli paste and spices.
Fry till aromatic and oil splits. 
Pour stock, add tamarind and season with salt. 
Simmer till heated through. 
Add mashed potatoes and crushed peanuts. 
Stir and keep it simmering. 

To serve -
Assemble noodles, eggs, tofu, bean sprouts and mint leaves in a bowl.
Pour gravy over and serve immediately.
