Eggs & Anchovies (Ikan Bilis) Sambal (Sauce)


There are various types of sambal depending on the type of meat or vegetables that one chooses to cook in it. For eggs, usually with chillies, shallots, onions and tomatoes. Instead of just eggs only, I added fried ikan bilis and garnished the sambal with coriander leaves.

Ingredients
To blend/ground
1 (about 60g) tomato
6 shallots
6 red chillies

Others
4 eggs - boiled and deep fried for a thin layer of crispy skin on the outer.
50g/1/2 cup anchovies/ikan bilis - soak or 10 min, rinse and drain out excess water.
 1/2 lime - extract juice
1 tsp palm sugar sugar
2 stalks coriander leaves -cut into 1 inch length
Oil - as needed
Salt to taste

Method:
When oil is heated, fry eggs for a thin layer of crispy skin on the outer.
Remove and keep aside.
Put in anchovies, fry till crispy.
Remove and keep aside.
Leave about 4 tbsp of oil in the same pan/wok.
Fry blended/grounded ingredients until aromatic and oil splits. .
Add in fried eggs, anchovies, sugar, salt and coriander leaves.
Quickly still all together and dish out.

  6. Isn't it a simple recipe and saves our time sometimes thinking what to cook?

    I can just have this sambal with rice and am satisfied.

  8. A major improvement to give it an anthentic taste, texture and color is to use dried chili paste instead of fresh chilies for the blended ingredients. Believe me, I spend alot of time perfecting this dish. There are improvements that can be made but this one is important.
