Coca-Cola Cake


I was enjoying a glass of coke and at that spur of the moment,  tadaa!!! what about a coke cake? Of course, it wasn't rushing into my kitchen immediately; I had to think, decide and get ready the ingredients. Since I like to level up things, out came another idea; a generous splash of coke glazing over the baked cake for a glossy finish.


Funny or strange how my friends couldn't identify what was the stand out ingredient in the cake until I had to open my big fat mouth. Awwwww!!!! Only then they agreed. Of course they loved it for its caramelized and spongy texture.

Ingredients
For cake
1 1/2 cups coke
1 cup brown sugar
3 eggs - beat/whisk until fluffy
3 tbsp salted butter
2 cups all purpose flour
1/2 tsp baking soda
1 tsp baking powder
1 1/2 tsp vanilla essence

Glazing:
1 1/2 cups coke
1 tbsp brown sugar

Method:
For cake
Add sugar and coke into a pan.
Simmer until you get a thick syrup; reduced to half the portion.
Remove from heat, add butter and stir slowly to dissolve it.
Let the mixture cool down.
Sift flour, soda and baking powder.  Gently fold in followed by whisked eggs. 
Tip cake mixture into a greased baking pan.
Bake at 175c for 40 Min's or until cake is done.

For glazing.
Simmer coke and sugar, again to obtain a thick syrup.
Pour over the cake while its still warm.
Let the cake cool down before cutting in shapes you prefer.

  11. Wow wow you're really creative and talented. Even if I have this idea (for example) I won't know how to make a cake out of it. Most probably the cake won't rise, etc. Haha

  17. The other day I saw a coca cola chicken now its a coca cola cake, what a unique way of using Coke. I guess the next one I will see will be a coke ice cream :)
