Baked Cheesy Potatoes


Unlike bonda/fried savoury potatoes, this baked snack can be proclaimed as healthier. Well, baking without a doubt is better than frying, all these years, I admit I hardly baked. Since of late with investing in an oven, definitely the start was baking these cheesy potatoes. Unsure on how to operate and control the temperature, I literally sat in front of the oven and kept looking inside. Tiring and terrifying, eventually I was glad these lovely baked snack turned out as expected - crispy outer layer with soft potatoes and oozy cheese inside.


Ingredients
2 (abt 300g) potatoes - boil till tender, remove skin and mash
2 stalks coriander leaves - slice thinly 
2 stalks spring onion - slice thinly 
2 1/2 tbsp Parmesan grated cheese
1 cup bread crumbs
1 egg - lightly beaten
Salt and pepper for taste

Method
Into mashed potatoes, add coriander leaves and spring onion.
Season with salt and pepper.  
Mix all together for a thick dough. 
Roll into small balls.
Press in the center for a space to fill up with cheese. 
Seal, roll again and flatten. 
Dip in egg and coat over with bread crumbs.
Preheat oven at 170c for 5 minutes.
Bake for 1/2 hour or until a nice brown outer layer.

  10. What an incredibly cool idea. It's a great way to use leftovers. I'd have never thought to turn them into cheese filled balls like that. Heck, I may not even be able to wait for leftovers. :)
