Something different, mutton featured in fried rice - the first attempt and quite a good attempt actually. And to complete this fried rice, another favourite ingredient, potato (bonda, potatoes dried chillies, potatoes anchovies and lemongrass chilli potatoes). Rice of course is the daily food and for more spiciness, pair this fried rice with sambal belacan.
Can't really complain about simplicity when hunger strikes. Then it can also be fried rice. A quick fix meal when I don't want to cook. But indirectly forced to. Especially during the weekends. Here's to minced lamb, potatoes and chilli flakes and rice stir fried.
3 cups cooked white rice
150/1 cup minced lamb
1 large potato - remove skin, cubed and deep fried
1 red capsicum - diced
5 shallots - sliced
1 tsp chilli flakes (or as per taste)
1 tsp ginger paste
1 tsp garlic paste
2 sprigs coriander leaves - sliced
2 tbsp oil
Salt for taste
Combine and mix lamb with ginger garlic paste.
Heat oil and saute shallots.
Add lamb. Fry while breaking up to prevent lamb from lumping together.
Once crunchy, add rice, salt and chilli flakes.
Stir to combine.
Add capsicum, fried potato and coriander leaves.
Give a good stir and off the heat.
