To and fro, back and forth, touch and go, and hit and run. That's how it is when food is a concern. Rice again (Ghee Rice & Tomato Rice) ladies and gentlemen, fried rice again ladies and gentlemen. Guess I'm currently not progressing that much with cooking, neither do I have the time to coin new fantastic recipes. Then again, who cares about fantastic food when a meal at home is a matter of cooking and getting out from the heatwave kitchen. This Minced Lamb & Potato Rice Fried Rice I just like that visualised. I didn't know what to cook, I peeped into the fridge and I made it. Minced lamb, fried potatoes and chili flakes being the main elements. I'm done here darling followers of nava-k. We sure will allocated more time for each other in the next post. Happy Day!
3 cups cooked white rice
150/1 cup minced lamb
1 large potato - remove skin, cubed and deep fried
1 red capsicum - diced
5 shallots - sliced
1 tsp chilli flakes (or as per taste)
1 tsp ginger paste
1 tsp garlic paste
2 sprigs coriander leaves - sliced
2 tbsp oil
Salt for taste
Combine and mix lamb with ginger garlic paste.
Heat oil and saute shallots.
Add lamb. Fry while breaking up to prevent lamb from lumping together.
Once crunchy, add rice, salt and chilli flakes.
Stir to combine.
Add capsicum, fried potato and coriander leaves.
Give a good stir and off the heat.
