Lamb Fried Rice


To and fro, back and forth, touch and go, hit and run. That's how it is when food is a concern in my house. Rice of course is the main call. Whether plain rice or rice elevated alongside other ingredients. Rice indeed is making its utmost humble appearance again in this space of mine today. Yes foodies, rice again (Ghee Rice, Tomato Rice & Jeera/Cumin Rice). Guess its due to stress and me not being able to grip my time management? Then again, what is there to complain about fried rice? Always the easy way out to cooking and always a complete wholesome filling meal? Of course (Kampung Fried Rice, Belacan Fried Rice & Chinese Fried Rice). Moreover, this Lamb Fried Rice not only packs a punch, cooked white rice along minced lamb (Lamb Pho/Vietnamese Noodle Soup), additionally, its a complete package to another level of fried rice with potato, red capsicum and the love of our Malaysian spiciness. Oh, also the scent of coriander leaves.

Ingredients:
3 cups cooked white rice
150/1 cup  minced lamb
1 large potato - remove skin, cubed and deep fried
1 red capsicum - diced
5 shallots - sliced
1 tsp chilli flakes (or as per taste)
1 tsp ginger paste
1 tsp garlic paste
2 sprigs coriander leaves - sliced
2 tbsp oil
Salt for taste

Method:
Combine and mix lamb with ginger garlic paste.
Keep aside
Heat oil and saute shallots.
Add lamb. Fry while breaking up to prevent lamb from lumping together.
Once crunchy, add rice, salt and chilli flakes.
Stir to combine.
Add capsicum, fried potato and coriander leaves.
Give a good stir and off the heat.

  8. I ate Potato rice !! but this one is different ..a mix of mutton or lamb with potato rice ..Hmmm ..Have to try this one !!!
