For this recipe, I am using the Sambal Belacan which I had prepared earlier. We at home are quite on the heavy side for spicy food, so I added more of the sambal belacan inside but its really up to you on how much you prefer. Making fried rice is not complete without veges and cabbage certainly will be the best choice. This is a typical Malaysian style fried rice you can find especially at cafes and stalls.
Ingredients
3 cups of cooked white rice
2 tsp of sambal belacan
100g cabbage - shredded
45g anchovies/ikan bilis - soaked in water for 15 mins and drain of the water
1 (abt 80g) medium size onion - sliced thinly
2 eggs
4 tbsp olive oil
salt to taste
Method
Heat 1 tbsp oil and when heated, break in the eggs. Stir and fry to scramble to medium cooked level.
Remove and keep aside. Add the balance oil inside. Fry the anchovies until crispy and remove it. Put in the onion and saute to soften for about 3-4 mins. Now goes in the sambal belacan. Stir both ingredients together.
Add the rice and salt to taste. Continue to stir to blend all the ingredients together. Finally, the cabbage, fried anchovies and scrambled eggs are added.
Continue to stir for another 3-4 mins before removing from heat.
