During our food venture to "Spicy Crab Portuguese & Local Cuisine" one of the dishes we called for and tasted was the grilled aubergine/Chinese brinjals. Rather than having it again at the same restaurant, I decided to make it at home. I sort of recalled how it tasted and with this in mind, prepared my version of the grilled aubergine. It was not grilled on a outdoor pitt but done with a portable grill over the stove. Have it as a finger food or as a side dish and fits great for a bbq occasion.
Ingredients
3 (abt 400g)aubergine/Chinese Brinjals - washed and sliced into lengthways, abt 1cm thickness.
Black pepper powder (as needed)
Salt (as needed)
1 tbsp olive oil
Method:
Rub enough pepper and salt all over the aubergine slices.
Heat the portable grill and drizzle the oil in.
When heated, grill both sides of the aubergine and remove to be served.
