Choc Fudge (with coconut topping)


I was in the mood for making a dessert, which is definitely not always. I got the recipe from mum and like a pro, quickly got down to the process. I actually was doing a good job until when it came to the point of tipping the thick fudge mixture into the baking tray. That's when I realised that sometimes a helping hand is much appreciated because it was quite a thing -  the choc mixture hardens quite fast and trying to scrape it from the bowl wasn't easy. It was balancing act, one hand holding the bowl and the other, carefully doing what was needed. Anyway, I struggled but managed.


My friends loved the choc fudge coated with coconut though some commented that I should have reduced the amount of sugar. Perhaps that will give you an indication on whether you want to cut the quantity of it. 

Ingredients
1 1/4 cup margarine/butter (melted)
1 cup brown sugar
2 eggs (lightly whisked)
1 1/2 cup cake flour
1 tsp vanilla essence
1 1/2 Hershey's semi-sweet chocolate chips (or any other brand)
3 tbsp desiccated coconut.

Method:
When margarine is still warm, add brown sugar and mix to melt.
Fold in flour (make sure there's no lumps).
Add whisked eggs, little by little and continue to fold.
Pour into a pot, add chips and cook over low heat.
Keep stirring until mixture becomes really thick.
Remove from heat, beat with a wooden spatula continuously, for about 3 minutes.
Tip into a baking tray.
Sprinkle coconut on top and gently press in.
Let it harden before cutting in shapes of your choice.

  14. Your choco fudge is to-die for!! Looks utterly delicious. But there is one think I need to know since you've used magarine in this instead of butter. Is it for a better texture or better taste.
