Lotus Root Chicken Soup

As said previously in "Chick Kut Teh", soups are the best comfort food. All the more Chinese soups - healthy, packed with nutrients and healing properties because of the mixes of herbs for the taste. This soup is made with chicken, simmered with lotus root, red dates, kei chi, ginger and garlic. Making soups is also quite straightforward and easy. Its just simmering over low heat emulsify the flavours.

6 medium size chicken pieces
1 tsp corn flour
1 stem (medium size) lotus root - remove skin and sliced
A handful dried red dates
A handful of dried kei chi (wolfberries)
(soak dates & kei chi in water for 10 minutes and rinse)
1 tsp ginger paste
1 tsp garlic paste 
2 tbsp olive oil
1 tsp Chinese wine (optional)
2 stalks spring onion (sliced) 
Salt and pepper for taste 

Rub chicken with corn flour, ginger and garlic paste.
Saute in heated oil for 2 to 3 min.
Add 1/2 litre of water. 
Simmer to heat through. 
Add  lotus root, dates, kei chi, salt , pepper and Chinese wine. 
Cook for another 5 minutes.
Garnish with spring onion before serving.

  1. haha, me likey this soup
    but usually for me, i dun add the ginger n garlic, or fry the chicken, i prefer to just simmer the chicken n lotus roots for the fragrance n it will be less oily...:)
