Yam Basket (Vegetarian)


Yam basket may seem simple to make, okay, assumingly it is, but shaping the mashed yam into a basket can be tricky. Trust me please, basket won't be as perfect as those you savior in Chinese restaurants. Even so, that's okay people. Cooking at home is not about perfection, though I believe over time it can be perfected. Nevertheless, for the time being, as long as this yam basket does not break or crumble while frying, you have molded it in such a way that the fried veggies can properly sit atop. The veggies filled up in this basket came from fridge, of course, you can use other types for such a vegetarian version (Vegetarian Mee Hoon & Sodhi), please also go ahead and add mince dchicken or minced pork, obviously for a non-vegetarian yam basket.


Ingredients
For yam basket
1/2 yam (boil/simmer and mash)
1 tsp cornflour
Salt to taste
Oil for deep frying

For vegetable filling
3 tbsp diced red capsicum
3 tbsp diced green capsicum
3 tbsp diced Chinese bitter gourd
2 tbsp chopped onion
1 tbsp light soy sauce
1/2 tsp Chinese wine (optional)
1 1/2 tbsp oil
Salt and pepper to taste

Method
For the yam basket
Mix yam with cornflour and salt.
Gently shape the mixture into a hallow round shape (thin or thick as you prefer).
Deep fry, remove and keep aside.
For the vegetable filling
Heat oil and when heated, saute onion.
Add bitter gourd and cook to soften. 
Put in red capsicum and green capsicum, pour soy sauce and Chinese wine, and season with salt and pepper.
Stir and cook to a texture you prefer. 
Spoon into the yam basket.
Don't forget to trend alongside "cook with nava-k"/nava_krishnan on every other social media pleaseee!!
