Dory Fish With Spicy Butter Sauce

Dory fish doesn't cost much and it cooks really fast. Nevertheless, its a delicate fish which crumbles easily over high heat or heavy cooking style. The simplest technic is: grill seasoned dory over non-stick pan, make the spicy butter sauce and pour over alongside with a good serving of any kind of steamed/boiled greens.

For the fish
2 pieces dory fish fillets
Pinch of dried basil leaves, pepper, salt and drops of olive oil
Marinate together as least for an hour.
For the butter sauce
1/4 teaspoon lemon rind
1/2 lemon - juiced
2 tablespoon of low fat butter
1/4 cup low fat milk
1 tablespoon olive oil
2 red chillies (remove seeds and sliced thinly)
One handful of coriander leaves (sliced thinly)

15 french beans (boiled with salt added)

Heat a non-stick frying pan and drizzle oil inside.
Place fillet and cook on both sides. 
Remove, place on a serving plate and arrange beans around. 
For the sauce
In the same pan, add butter and olive oil. 
Once slightly heated, add lemon rind. . 
Immediately pour milk and lemon juice. 
Let it simmer for a couple of mins. Stir in chillies and coriander leaves and pour over fish.
